What the narration says, word for word (translated from the Spanish voice-over).
In this video: how you define how many people each service needs, each day.
This is coverage. Each row is a service with its time window, and each column a day of the week. In each cell, the minimum number of people and, in brackets, the target. Notice it isn't one single number for the whole week. Friday lunch needs more people than Monday's, and Saturday dinner more than Sunday's. That's how a real restaurant works. Closing is calculated on its own, based on what time the kitchen closes that day. There's nothing to maintain by hand.
And if you have your point of sale connected, Batuta compares your coverage against real demand from the last twelve weeks, and tells you where you're putting too many people and where too few.
